In the glass it has an attractive pinkish hue with a hint of copper and a delicate mousse. The nose is lively with heavy yeasty notes and hints of morello cherries and wild strawberries.
This cuvee is made from 55% Chardonnay and 39% Pinot Noir with an addition of 8% still red wine (Pinot Noir) from Mareuil sur Ay. The great harvest of 2002 is the base of this cuvee which is presented without any "dosage".
Ayala is owned by the Bollinger Champagne House.
