Taking a simple concept of sparkling sauvignon blanc, and using attention to detail and a not so simple approach in the winery, has provided a wine that sets the bench mark for Sparkling Sauvignon blanc
Fine, foamy bubbles and sweet fruit on the front palate, followed by a long clean dry finish make this New Zealand fizz very drinkable! Lime, lemon and stone fruit notes on the palate with a subtle hint of light spice.
Vinified in numerous small batches, and then aged on lees for 6 months, to soften the palate and build weight and viscosity to counter the prickly effect of the dissolved CO2 bubbles. The final blend incorporated some wine that was a little sweeter, to ensure balance, and 5% of Mendoza chardonnay which had been fermented and aged in new french oak hogsheads.
Made to be enjoyed as an aperetif or with light canapes.
