A wine with a very deep yet bright, golden colour and amber highlights. Subtly eccentric aromas introduce immediate interest - there is a soft honeyed central note with a sweet raisiny, figgy heart. This extends further with age developed nuances such as spices, old furniture, cocoa, chestnuts, and creme caramel.
The wine has a very mellow and comfortable feel in the mouth - soft, sweet, very slightly tangy and orange-peely at the finish with just a faint hint of subtle wood tannins giving support to a long and fine finish.
This Vin Santo is made in the best years only. The grapes are selected directly from the vineyard and are then hung from the rafters to dry - from the harvest until December. Vin Santo is sealed into "Caratelli" for a long time, ranging from a minimun of six years to a maximun of ten and only then is it bottled
Serve with desserts and biscuits, it is an excellent aperitif when chilled and it is ideal with aged cheeses.
