The Crossings Pinot Noir is full of red cherry and wild bramble fruit aromas. In the mouth it has a complex feel and underlying tannins. The red fruit theme continues with a gently biting acidity that makes it the ideal companion to grilled meats, lamb in particular. Game birds or liver and bacon also work well.Value for money Quality
Try it with Herby Grilled Lamb Cutlets
Ingredients
8 trimmed lamb cutlets
Fresh Rosemary 2 0r 3 sprigs
Oregano dried 1 tsp
Lemon 1/2 cut into small chunks
Garlic 2 or 3 whole cloves
Olive Oil 2 tbsp
Sea Salt 1tsp
Method
In a large mortar and pestle place the herbs, lemon, garlic, olive oil and salt and give it all a good bruising to release the herbs aromas. Place the lamb cutlets in a dish and cover with the above mixture, leave for 20 minutes to infuse Meanwhile heat the grill, or light the Barbeque and get it good and hot. Grill the cutlets along with some of the rosemary until the meat is properly seared and the fat is crispy. Serve with the green salad and cous cous (Posted on 07/09/2011)
