Passerina Spumante has a delicate floral scent of white lilac, honeysuckle and acacia, with hints of green fruit. The palate is vibrant, fresh and fruity - melon and peaches with hints of citrus - lime and lemon. It is pleasantly slightly acid but with a delicate structure. The perlage is persistent and shines with thousands of bubbles.
Passerina is a little-known grape grown almost exclusively in Le Marche region of eastern central Italy. It produces great still wines and due to its intense acidity and aromatic properties, it lends itself to sparkling wines made by the Charmat method.
The Marconi winery was founded in 1947 and now has vintners from three generations. The family has always cultivated their vineyards with the same passion and dedication to produce wines able to interpret and tell the wonderful features of the territory. The grapes were manually harvested from historic vineyards in the rolling hills of Castelli di Jesi, near the river Esino at 250 metres above sea level, in the municipality of San Marcello. The grapes were soft pressed with fermentation in stainless steel at controlled temperature.
The base wine was poured into steel canisters with thermoregulation. With the addition of yeast, these autoclaves are hermetically sealed triggering the second fermentation at a controlled temperature. The wine remains in the autoclave for 90 days. This is the Charmat method that produces the bubbles and is the same method used for Prosecco. The resultant spumante wine is then bottled under pressure and sealed with a traditional cork and cage closure.
This is more than a match for more expensive Prosecco!

The secret to Champagne bubbles comes from the addition of a special mixture of sugar and wine called the ‘liqueur d’expedition’. This is what makes the bubbles. Sparkling wines have bubbles and high acidity and range from white, rosé to red in colour. Sparkling wines have been long associated as a celebratory beverage, but actually match with a wide variety of foods.
