Several wine samples are brought into the tasting room - some young wines of 2, 3 or 4 years old, some with an average age of 7, 8 or 9 years old.
Out of these lots a 5 year old blend is created, a wine that takes us back to our origins, to the earth, to a sense of power, heat and red fruits.
Irreverent, firm, full of sanguine fruit, a wine that brings to mind the efforts made by our ancestors.
On the palate it is soft, noting a balanced, full on the mouth, glycerine-like sensation. The ripeness of its fruit reveals to us a flavoursome figure, exalting the more volatile, evolved back of the nose aromas. Its persistence is notable.
Goes perfectly with mild cheeses and chocolate. Excellent accompaniment to meals with game, particularly duck.
