Poacher's Blend, St Hallett~Fresh, tropical fruit flavours typical of Semillon and early picked Sauvignon Blanc as well as a hint of citrus and acidity from the Riesling…~St Hallett Poacher’s Blend embraces the spectrum of aromatics and fresh, tropical fruit flavours typical of Semillon and early picked Sauvignon Blanc in the Barossa as well as a hint of citrus and acidity from the Riesling.

Pale yellow in colour with a green hue. The nose is full of passionfruit and pineapple with underlying lime and grassy aromas, as well as citrus hints from the Riesling. Full flavoured and generous, the palate exhibits a range of fruit flavours that persist over the whole length, finishing with a twist of lime. The phenolic backbone provides structure and mouth feel, which is balanced with crisp acidity.

This wine marries with the freshwater crustaceans and fish that are regularly "poached" from the creeks and waterways of landowners in the country. The simple, fresh pristine flavours of fresh yabbies and blue swimmer crab are the perfect complement.

The youthful palate is immediately luscious with those tropical fruit, honeysuckle and stone fruit flavours balanced by fresh grapefruit and light butter tastes, before a long persistent fruit finish. The wine shows vibrant freshness with enjoyable hints of hazelnut and slight mineral boney-ness, characteristic of Marsanne.

Given time to prove its longevity and most importantly not served over chilled, The Hermit Crab Viognier Marsanne we believe should develop intense, complex nuttiness with emphasis on cashews, as well as butterscotch characters.

Serve with a large range of foods from lightly flavoured, through to full flavoured poultry, veal, lamb and pork as well as desserts and cheeses. Also good as an aperitif.

Given time to prove its longevity and most importantly not served over-chilled, d’Arenberg’s The Olive Grove McLaren Vale Chardonnay develops intense, complex honey, cashew, fig and soft toast aromas. Typically, butterscotch, light caramel and hints of fresh tobacco are evident too.

The fresh structured mid palate retains its texture but opens slowly into generous sweet banana butterscotch flavours with hints of smoky bacon and green olive tastes before finishing with a persistent developed stone-fruit and chalky texture.

A mature d’Arenberg Olive Grove Chardonnay produces a rich, rolling generous and complex finish balanced by long, clean, refreshing acidity as have more than a decade and a half of previous vintages

Serve with seafood, as an aperitif, with pasta with a creamy sauce, chicken, veal as well as salad.

MadFish Sauvignon Blanc Semillon~The wine displays the strong aromas of cool climate Sauvignon Blanc with grassy herbal characters tempered by some more floral honeysuckle notes derived from the Semillon…~The 2007 season was near perfect with even and moderate temperatures and no summer rain. Crop yields were down as a result of the cold spring of 05/06 which reduced the fruitfulness of the budwood however with reduced yields comes improved quality. The result was fewer bunches overall but even fruit set from the ideal growing conditions of spring 2006. There were a couple of hot days in March but the overall growing season was early and moderate producing completely disease free fruit of optimal ripeness.

The resultant 2007 vintage delivered us wonderful Sauvignon Blanc and Semillon fruit flavours: tight citrus notes from the Great Southern, grassy and herbal characters from the Pemberton region, and riper passionfruit characters from Margaret River. With very early picking dates this year the fruit was able to ripen without any disease risks associated with late season rains. The wine is unwooded, with fermentation occurring in stainless steel tanks and then bottled at an early age. A low temperature, protective regime was adopted during its production, thereby preserving the finer fruit characters of these aromatic varieties.varieties.

MadFish Unwooded Chardonnay~The palate displays complexity with layers of fruit flavours balanced against the leaner, elegant citrus flavours. The finish is generous and long with a clean acid thrust…~The wine is of a pale straw appearance with tints of green. The nose exhibits a wonderful aromatic drive bursting with fruity esters. It gains further complexity by the combination of the riper white peach and melon aromas with the finer grapefruit and citrus characters. The palate, like the nose, is also complex with many layers of fruit flavours and a clean fine structure. Again the riper fruit characters balance well with the leaner more elegant citrus flavours. The finish is generous and long with a clean acid thrust.

The 2005/2006 growing season was a remarkably cool one. Maximum temperatures only rarely got as high as 30C and in general the nights were relatively warm. This meant that the diurnal range (the difference between the maximum and minimum temperature for a twenty four hour period) was very low. This small diurnal range throughout the year lead to very even ripening conditions for white grapes.

The cool conditions through the year allowed the fruit to develop very fine and quite delicate flavours. Additionally the lower temperatures meant that the fruit stayed on the vine for about a week to two and a half weeks longer than is normal leading to greater concentration of flavour in the fruit.

The fruit for this wine was exclusively sourced from the cooler regions of the lower South West of Western Australia where Chardonnay tends to develop a range of flavours from the leaner citrus end of the spectrum up to the fuller nectarine and melon characters.

The finish is quite mineral like with a lovely zing of acid that streaks down the palate.This wine will drink wonderfully from a very young age, but like all good Rieslings it will develop intriguing secondary characters as it ages, allowing for toasty flavours to compliment the primary fruit. Given correct storage this wine will reward cellaring for at least eight years.

The Winter of 2004 proved to be one of the driest in recent years, resulting in very low soil moisture as the vines started to emerge from dormancy in Spring. This in turn meant a slight reduction in yields for some vineyards as flowering and fruit set was sometimes stressed for water. However conditions through late Spring and Summer were ideal for the vines as it was cool and dry.

Extensive blending trials were carried out to produce a wine that is a little riper than most Rieslings, resulting in a wine that is perfect for early consumption but still capable of aging in the bottle.

Fruit was sourced from southern Margaret River. The cooler part of the region suits these two aromatic varieties.

Viticultural practices, now taken as standard, have evolved over thirty years and to a large extent, this wine is made on the vine.

It is a balancing act between leaf to crop ratio and the leaf's exposure to sunlight. The ability to harvest at night is all important.

Norfolk Rise, owned by Pipers Brook, was only established in 2000 (named after an impressive and dominating plantation of lofty native Norfolk Island Pines nearby). The vineyards are planted on undulating coastal hills, just five kilometres from the ocean on classic Terra Rossa soils.

The Kuitpo Vineyard Sauvignon Blanc vines are now two decades old and producing consistently exceptionalwines. 2005 is the first release of this wine under the K1 label coming from a truly stunning vintage for this variety.

In 1987 Geoff Hardy and his family began planting 30 hectares of vines with the aim of producing high quality fruit for specific use in super premium wines. The site, named Kuitpo Vineyard, is located along the ridge of the South-West escarpment of the Mt Lofty Ranges at a height of between 300-350 metres above sea level. The combination of this altitude, climate and ancient soils make the site ideal for a premium cool climate vineyard. As this vineyard was the first significant planting in the Kuitpo region, most people refer to it now as the 'K1' vineyard.

For Yalumba the result is a wine boasting a combination of unique terrior, high quality vines and the use of 'wild ferment' techniques, allowing the natural yeasts that occur in the vineyard to initiate fermentation.

This Chardonnay sourced from Eden Valley features the use of a natural or‘wild yeast’ ferment where the juice is encouraged to ferment with theindigenous vineyard yeasts which are present on the grape skins. Theindividual yeasts each participate in a natural synergy to build layers ofcomplexity and finesse into the wine. Palate structure is further enhancedthrough extended lees contact and regular lees stirring after the completion offermentation. Creamy nougat and toasted almonds with an appealing citrusand white peach lift. The palate is fine and creamy with flavours of stone fruitand figs. Elegantly structured, this wine shows nuances of toasty oak and afresh citrus acidity to finish.

A palate with weight, sweetness and all in seamless balance with mouth filling texture.

The primo amigo in this trio is marsanne, grown at McLeod Creek, whilst Calgardup Brook is home to the chardonnay. These two vineyards lie in the southern half of the Margaret River wine region.

The third amigo comes all the way from Manjimup, east of Margaret River, courtesy of our good friends at Fonty's Pool Vineyard.

The three white amigos have their roots in gravel loam derived from granite. The marsanne grows on an exposed hill, a tough site where, without a restraining struggle, this amigo might become rambunctious and over indulged.

The Last Ditch Viognier, d'Arenberg~Increasingly popular as a result of its recently discovered attributes, in particular its apricot, peach and blossom characters…~Kit Stevens MW (Master of Wine) calls Viognier the Viagra of the vineyard for the new millennium. The variety has become increasingly popular in Australia since the late 1990’s as a result of its recently discovered attributes, in particular its apricot, peach and blossom characters.

In its youth d’Arenberg’s The Last Ditch Viognier has a brilliant mid straw colour with lifted nectarine, white peach and apricot dominated aromas, as well as enveloping rose, ginger and fruit blossoms.

These also dominate the young palate where thick and viscous fruit showing rose, nectarine and white peaches develop into an unctuous long lasting palate showing ginger and spices. A very complex wine, offering a huge spectrum of flavours.

After some bottle ageing d’Arenberg’s The Last Ditch Viognier should develop in colour to a richer bright gold.

Serve with a large range of foods from lightly flavoured, through to full flavoured poultry, veal, lamb and pork as well as desserts and cheeses. Also good as an aperitif.

Shaw and Smith Sauvignon Blanc~The Adelaide Hills is clearly the leading region for Sauvignon Blanc in Australia. Shaw + Smith has been made since 1990 and is a benchmark for the style.…~A benchmark for Australian Sauvignon Blanc. Made from 100% Adelaide Hills grapes, the wine is unwooded to maximize varietal punch. The aroma has restrained sauvignon grassiness coupled with riper fruit characters. The palate is fresh and lively with pure varietal flavours and crisp acidity.

The 2007 vintage growing season was overall very warm and dry. Spring frosts affected certain parts of the Adelaide Hills, hence quantities were down a little but not dramatically. The Adelaide Hills had a good vintage in terms of quantity and quality with the flavours of Sauvignon Blanc more in the tropical and less herbaceous spectrum. Palate weight is good.

Half of the grapes are sourced from estate vineyards and the other half from contract growers in the Margaret River region. Gravel laterite soils predominate in most of the best vineyards with some sandy loam soils in others. A range of canopy management strategies are employed, all with the objective of maximising sunlight into the fruiting zone. The most favoured technique is vertical shoot positioning with leaf removal which improves sunlight exposure, enhancing flavour development and providing a balanced leaf to fruit ratio for even ripening. Irrigation is used judiciously to maintain balanced vine growth and a steady rate of ripening.

Howard Park Chardonnay~This wine has a seamless, refined palate with initial citrus flavours followed by a savoury mid-palate and finishing with fine acidity and French oak…~This Chardonnay combines cool-climate flavours with texture and complexity in a wine that is both delicate and subtle. The particularly careful attention paid to the wine has resulted in a brilliant, almost steely, pale straw appearance.

The nose is an enticing combination of fine floral citrus with hints of peach. These aromas are supported by a richer savoury note from lees stirring, with hints of smoky, nutty barrel ferment characters providing background complexity. The wine has a seamless, refined palate with initial citrus and stone fruit flavours followed by a savoury, textural mid-palate and finishing with fine minerally grapefruit acidity and excellent French oak. This wine will reward five years of careful cellaring.

Cape Mentelle Chardonnay~The full, textured palate displays grilled asparagus, a flamboyant squeeze of citrus and a hint of dried herbs, finishing long with vibrant, cleansing acidity…~Pale gold in appearance. Aromas of nectarines and figs combined with the sweet spice of gingernut biscuits greet the nose.The palate opens with rich quince paste and cardamon spiced poached pears. The mid-palate has refined peaches and cream, subtle mealy notes and a lingering finish resonating with crisp lemon zest.

The fruit for this wine is sourced from three sites, with most coming from our Chapman Brook Vineyard planted in 1993-4, located about 20km south-east of Margaret River townsite. The chardonnay here grows on a north facing slope with well-drained, grey gravel loam soils and provides crisp, clean citrus flavoured fruit. The McHenry Vineyard has a sheltered north-easterly aspect and deep gravel loam soils sloping down to the Margaret River. This low-yielding vineyard provides quality fruit that forms the backbone of the wine. The sandy loam soils of the Maiolo Vineyard, further north in the region, produce fruit contributing to the ripe, full-bodied characters of the wine. All vineyards are spur pruned and vertical shoot positioned to enhance sunlight exposure.

Wet, windy conditions during Spring lead to poor flowering and in turn reduced crops. Other than 3-4 days of hot weather in late December, the all important months for flavour development and acid retention of February and March were very mild. Exceptional flavours and high natural acidity resulted.
