Dom Pérignon Oenotheque~Dom Perignon occasionally releases small quantities of the OEnotheque wines when they reach a peak in their quality…~Dom Perignon is unique in that a proportion of every vintage is retained and aged within the cellars. This allows each new generation of winemakers to taste older vintages, to understand the history of wine, to ensure greater consistency of style and to observe how each vintage develops and matures with age. The cellar area dedicated to the storage of these older vintage wines is called OEnotheque (or, as the French say "en 'o' teque") which means 'Wine Library'.

Dom Perignon peaks at three distinct times during its life cycle, although the timing of the peaks may vary from vintage to vintage. The first peak ('phase de plenitude' in French) at about seven years, is the stage when the wine is at its most vibrant and the majority of the vintage is released into the market. The second peak usually occurs between fourteen and twenty years and is the stage when the wine takes on greater depth and vigour. The third, from 25 years onwards, is when the wine reaches full maturity and takes on an extra dimension of complexity.

The pale salmon colour is achieved by the addition of still red pinot noir wine to a blend of still wines made from pinot noir and chardonnay. The pinot noir wine must be of exceptional quality. The two grapes together offer harmony and complexity which is less likely to be achieved in Champagne by either grape on its own.

Smaller production than many of the prestige Houses, but demand is huge for this delicious, rich and yeasty blend.

Packed with mouthfilling yeasty flavours with just a touch of hazelnuts, the finish is clean and zesty.

Most of the fruit used was from Roederer's own vineyards, which average 98% on the Echelle des Crus rating (among the highest of the Champagne houses). The resulting wines are blended with reserve wines from three different vintages, Roederer age their reserve wines in oak, giving great richness. After second fermentation the bottles remain in the cellar with their lees for 3 years gaining yeastiness.

Riva, the iconic Italian speedboat company have teamed up with Veuve Clicquot to produce this mahogany and chrome case complete with a 1998 bottle of Veuve's top champagne, La Grande Dame, and two flutes.

La Grande Dame 1998 has a pale gold colour with jade glints. The wine is crystal clear, with unbelievably fine bubbles. On the first nose, typical Chardonnay characteristics come to the fore, with the arrival of floral and mineral aromas (acacia, ferns, chalk).

By agitating the wine, scents of candied fruit (citrus fruits, apricots, quince) and sweet almond emerge, to reappear later in the mouth.

After rotating the wine for a few minutes more, rare notes such as peaty malt, tobacco and delicate herbs, are gradually unveiled.

This aromatic, impressively complex bouquet is confirmed in the mouth. On the palate, the wine is clear-cut and pure, perfectly balanced with a delightful silky smoothness.
